Ingredients:
1 (16.3-oz) can refrigerated biscuit dough
8 caramel candies
1 tablespoon butter, plus 2 tablespoons melted butter
2 apples, finely chopped
2 tablespoons brown sugar
1 teaspoon ground cinnamon
Pinch of salt
Caramel sauce, for topping
Crushed peanuts, for topping
Directions:
Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
In a skillet, melt 1 tablespoon butter over medium heat. Add finely chopped apples, brown sugar, cinnamon, and a pinch of salt. Cook, stirring occasionally, until apples are softened and caramelized, about 5-7 minutes. Remove from heat and let cool slightly.
Separate biscuit dough into individual biscuits. Flatten each biscuit into a circle large enough to hold filling.
Place a spoonful of the apple mixture in the center of each biscuit circle. Top with one caramel candy.
Fold the dough over the filling and pinch edges to seal tightly, forming a ball.
Place each filled biscuit seam-side down in the prepared muffin tin.
Brush the tops with melted butter and bake for 15-18 minutes or until golden brown.
Remove from oven and allow to cool slightly before drizzling with caramel sauce and sprinkling with crushed peanuts.
