Ingredients:
For the chocolate cake:
β’ 2 cups (250g) all-purpose flour ![]()
β’ 3/4 cup (75g) unsweetened cocoa powder ![]()
β’ 1 Β½ tsp baking soda ![]()
β’ 1/2 tsp salt ![]()
β’ 1 cup (240ml) buttermilk ![]()
β’ 1 cup (200g) granulated sugar ![]()
β’ 1 cup (200g) brown sugar ![]()
β’ 1/2 cup (120ml) vegetable oil ![]()
β’ 2 large eggs ![]()
β’ 1 tsp vanilla extract ![]()
β’ 1 cup (240ml) hot coffee or boiling water
(to bloom the cocoa)
For the coconut-pecan frosting:
β’ 1 cup (240ml) evaporated milk ![]()
β’ 1 cup (200g) brown sugar ![]()
β’ 3 large egg yolks ![]()
β’ 1/2 cup (115g) unsalted butter ![]()
β’ 1 tsp vanilla extract ![]()
β’ 1 Β½ cups (120g) sweetened shredded coconut ![]()
β’ 1 cup (100g) chopped pecans ![]()
Instructions:
1 Make the cake layers:
β¦ Preheat oven to 175Β°C (350Β°F). Grease and line two 9-inch round cake pans.
β¦ In a large bowl, whisk flour, cocoa powder, baking soda, and salt.
β¦ In another bowl, beat eggs, both sugars, oil, buttermilk, and vanilla.
β¦ Slowly add the dry ingredients. Then carefully stir in the hot coffee.
β¦ Batter will be thin β pour evenly into pans and bake for 30β35 mins.
β¦ Let cool completely on wire racks. ![]()
2 Make the coconut-pecan frosting:
β¦ In a saucepan, combine evaporated milk, egg yolks, butter, and brown sugar.
β¦ Cook over medium heat, stirring constantly, until thickened (about 10β12 mins).
β¦ Remove from heat, stir in vanilla, coconut, and pecans. Let cool to spreadable consistency. ![]()

3 Assemble the cake:
β¦ Place one cake layer on your serving plate. Spread half the coconut-pecan frosting.
β¦ Top with second layer, and spread remaining frosting over the top (not the sides β traditional style!). ![]()
