Ingredients

The Cabbage Bowls
2 small to medium heads of green cabbage (or 4 large halves)
2 tbsp olive oil
Salt and black pepper to taste
½ cup chicken broth (for the baking dish)
The Cajun Seafood & Sausage Filling
1 lb shrimp, peeled and deveined (tails off)
12 oz smoked sausage (Andouille or Kielbasa), sliced into rounds
1 red bell pepper, diced
1 green bell pepper, diced
1 onion, diced
4 cloves garlic, minced
4 tbsp butter (½ stick)
1 tbsp Cajun seasoning (like Slap Ya Mama or Old Bay)

Instructions

Prep the Cabbage Bowls: Preheat your oven to 400°F (200°C). Cut the cabbage heads in half (or just cut the top off if using small heads). Using a knife and a spoon, carefully core and hollow out the center, leaving a sturdy shell about ½-inch thick. (Save the insides for coleslaw later!). Brush the cabbage cups inside and out with olive oil, salt, and black pepper. Place them securely in a baking dish.
Roast the Bowls: Pour the chicken broth into the bottom of the baking dish to create steam so the cabbage doesn’t dry out. Bake the empty cups for 20 to 25 minutes until they start to soften and brown around the edges.
Brown the Sausage: While the cabbage roasts, heat a large skillet over medium-high heat. Add the sliced sausage and sear until beautifully browned. Remove from the pan and set aside.
Sauté the Veggies: In the same pan (keep those savory sausage drippings!), add the diced onion and bell peppers. Sauté for 5 minutes until soft, then stir in the minced garlic and cook for 1 more minute until fragrant.
Cook the Shrimp: Add the shrimp, butter, and Cajun seasoning to the skillet. Cook for 2 to 3 minutes just until the shrimp turn bright pink. Toss the browned sausage back into the pan and mix everything together.
Stuff and Finish: Remove the cabbage cups from the oven. Spoon the savory shrimp and sausage mixture generously into each bowl, piling it high. Return to the oven and bake for another 10 to 15 minutes until the cabbage is tender and the filling is sizzling.
