What makes it special?
This cake is inspired by Elvis’s famous favorite flavors — peanut butter, banana, and chocolate — combined into a decadent layered cake that rocks your taste buds!
Ingredients:
Cake layers:
• 2 cups all-purpose flour
• 1 ½ tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• ¾ cup unsalted butter, softened
• 1 ½ cups granulated sugar
• 3 large eggs
• 1 tsp vanilla extract
• 1 cup buttermilk
Filling & Frosting:
• 1 cup creamy peanut butter
• 1 cup powdered sugar
• ½ cup unsalted butter, softened
• 2 ripe bananas, mashed
• 1 ½ cups heavy cream (for whipped cream)
• 200g dark chocolate, melted (for ganache)
Instructions:
1 Preheat oven to 175°C (350°F). Grease and flour two 8-inch round cake pans.
2 In a bowl, whisk together flour, baking powder, baking soda, and salt.
3 In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
4 Alternately add dry ingredients and buttermilk, beginning and ending with dry ingredients. Mix until just combined.
5 Divide batter evenly and bake for 25–30 minutes. Cool completely.
6 For the peanut butter frosting, beat butter and peanut butter until smooth. Gradually add powdered sugar and beat until creamy.
7 Whip the heavy cream to soft peaks and gently fold into the peanut butter frosting for a light, fluffy texture.
To assemble:
◦ Place one cake layer on a serving plate. Spread a generous layer of peanut butter frosting.
◦ Add sliced mashed bananas evenly over the frosting.
◦ Add the second cake layer on top and frost the entire cake.
◦ Drizzle melted dark chocolate over the cake to create a “rock n’ roll” effect.
