Ingredients:

2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
1 cup (225g) unsalted butter, softened
4 large eggs
Β½ cup (120ml) whole milk
1 tsp vanilla extract
1 tsp almond extract (optional, for flavor boost)
2 tsp baking powder
ΒΌ tsp salt
1Β½ cups (240g) mixed dried fruits (e.g. raisins, sultanas, chopped cherries, pineapple)
ΒΌ cup (30g) chopped nuts (like almonds or cashews) – optional
2 tbsp (15g) flour (for coating fruits)

Instructions:

Cream the softened butter and sugar in a bowl until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extracts.

In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients into the wet mixture, alternating with milk. Mix until smooth.

Toss the dried fruits and nuts in 2 tablespoons of flour to prevent sinking. Fold them gently into the batter.

Grease and line your square pan. Pour in the batter, level the top, and tap the pan gently on the counter to release air bubbles.

Bake in a preheated oven at 160Β°C (320Β°F) for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Before slicing top with dried mixed fruits.
