Ingredients:
2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
Β½ cup (115g) unsalted butter, softened (or Β½ cup / 120ml vegetable oil)
1 cup (240ml) whole milk (or evaporated milk for richer flavor)
3 large eggs (room temperature)
2 tsp vanilla extract
2 tsp baking powder
Β½ tsp baking soda
ΒΌ tsp salt
Buttermilk icing:
1/4 cup butter
1Β½ cups powdered sugar
2-3 tbsp milk
1 tsp Vanilla
Sprinkles
Instructions:
Preheat oven to 175Β°C (350Β°F). Grease and line a 9×5-inch loaf pan.
In a mixing bowl, cream the butter and sugar until pale and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry mixture to the wet, alternating with milk, mixing until just combined.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45β55 minutes, or until a toothpick inserted in the center comes out clean. Allow to coolcompletely.
Make the icing:
Melt butter in a small saucepan over medium heat.
Stir in powdered sugar and milk until smooth.
Remove from the heat and add vanilla extract.
Drizzle warm icing over cooled cake and decorate with sprinkles.
