Strawberry Shortcake Roll Cheesecake �A light vanilla sponge cake rolled with creamy cheesecake filling, sweet strawberries, and crunchy shortcake crumbs. The perfect no-fuss dessert!
Ingredients:
• 4 eggs
• ½ cup sugar
• ¾ cup flour + 1 tbsp cornstarch
• 1 tsp vanilla
• Pinch of salt
• 1 tbsp melted butter
Filling:
• 8 oz cream cheese
• ½ cup powdered sugar
• 1 tsp vanilla
• 1 cup cold heavy cream
Strawberries:
• 1 cup diced strawberries
• 2 tbsp sugar
Crumbs:
• 1 cup crushed shortbread or graham crackers
• 3 tbsp melted butter
How to Make:
1 Bake sponge cake (10–12 min at 350°F/175°C). Roll it up in a towel to cool.
2 Mix strawberries with sugar. Let sit.
3 Whip cream cheese, sugar & vanilla. Fold in whipped cream.
4 Unroll cake, spread filling, add strawberries & crumbs.
5 Roll up tightly. Chill for 2–4 hours.
6 Slice & serve with extra crumbs or berries!
