Sautéed Shrimp with Garlic and Lemon
Ingredients (Serves 2-3)
400g raw, peeled shrimp
3 garlic cloves, finely chopped
2 tbsp fresh lemon juice
1 tbsp lemon zest (optional but very fragrant)
3 tbsp olive oil
20g butter
Salt and pepper
Freshly chopped parsley (for finishing)
Preparation
Prepare the shrimp
If they are not already peeled, remove the shell and dorsal vein.
Lightly pat them dry with paper towels.
Heat the skillet
Place the olive oil and butter in a large skillet over medium-high heat.
Sauté the garlic
Add the chopped garlic and cook for 20 to 30 seconds until fragrant (but not burning).
Cook the shrimp
Add the shrimp and season with salt and pepper.
Cook for 1 to 2 minutes per side, until pink and opaque.
Add the lemon
Pour over the lemon juice and zest, and toss quickly.
Serve
Sprinkle with fresh parsley and serve immediately.
Tip: These are delicious with pasta, basmati rice, or as tapas with toasted bread for dipping in the lemon sauce.
