A rich and creamy chocolate pie topped with a fluffy meringue, perfect for satisfying your sweet tooth and bringing back nostalgic memories of classic desserts.
Ingredients:
• 1 pre-baked pie crust
• ¼ cup butter
• 1 cup sugar
• ¼ cup flour
• ½ cup cocoa powder
• 2 cups milk
• 3 egg yolks
• 1 tsp vanilla extract
• 3 egg whites
• ¼ tsp cream of tartar
• ½ cup sugar
Directions:
Prepare the Filling: In a medium saucepan over medium heat, melt the butter. Stir in the sugar, flour, and cocoa powder until well combined. Gradually whisk in the milk, and continue to cook, stirring constantly, until the mixture thickens and comes to a gentle boil.
Add the Egg Yolks: In a small bowl, beat the egg yolks. Slowly add a few tablespoons of the hot chocolate mixture to the egg yolks to temper them, then whisk the egg yolk mixture back into the saucepan. Cook for an additional 2-3 minutes, stirring constantly. Remove from heat and stir in the vanilla extract.
Fill the Pie Crust: Pour the chocolate filling into the pre-baked pie crust, spreading it evenly.
Make the Meringue: In a clean mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar, continuing to beat until stiff peaks form and the meringue is glossy.
Top the Pie: Spread the meringue over the chocolate filling, making sure to seal the edges to prevent shrinking. Use a spatula to create peaks and swirls for a decorative finish.
Bake the Pie: Preheat your oven to 350°F (175°C). Bake the pie for 10-12 minutes, or until the meringue is golden brown.
Cool and Serve: Allow the pie to cool at room temperature for at least 1 hour before slicing. Serve chilled or at room temperature, and enjoy this delightful old-fashioned dessert!
