• 2 1/2 cups (310g) all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon ground nutmeg (optional, for authentic old-fashioned flavor)
• 2/3 cup (130g) granulated sugar
• 2 tablespoons (30g) unsalted butter, softened
• 2 large eggs
• 2/3 cup (160ml) buttermilk (or milk + 1 tsp vinegar/lemon juice)

For Coating (optional)
• Granulated sugar or powdered sugar
• Or simple glaze (1 cup powdered sugar + 2 tbsp milk + 1/2 tsp vanilla)
Instructions
In a bowl, whisk together flour, baking powder, baking soda, salt, and nutmeg.
In another bowl, cream butter and sugar until sandy. Add eggs one at a time, mixing well, then stir in vanilla. Alternately add dry ingredients and buttermilk, mixing gently until a soft dough forms (slightly sticky).
Lightly flour a surface, roll dough to about 1/2 inch thick. Cut with a doughnut cutter (or round cutter + small cutter for the hole).
Heat oil in a deep pan to 350°F (175°C). Fry doughnuts 1–2 minutes per side until golden brown. Drain on paper towels.
While warm, roll in sugar or dip in glaze and let set.
