Refreshing Lime Mousse Cheesecake

Ingredients
For the Crust:
1 ½ cups graham cracker crumbs (or digestive biscuits)
¼ cup sugar
6 tbsp unsalted butter, melted
For the Cheesecake Layer:
16 oz (450 g) cream cheese, softened
¾ cup sugar
2 large eggs
½ cup sour cream
2 tbsp lime juice
1 tsp lime zest
1 tsp vanilla extract
For the Lime Mousse Layer:
1 cup heavy cream, chilled
½ cup powdered sugar
1 packet (about 2 ½ tsp) unflavored gelatin
3 tbsp water
½ cup fresh lime juice
2 tsp lime zest
For Garnish (Optional):
Whipped cream
Lime slices or zest curls

Instructions

Step 1 – Make the Crust
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
Mix crumbs, sugar, and melted butter. Press into bottom of pan. Bake 8–10 minutes. Let cool.
Step 2 – Bake Cheesecake Layer
Beat cream cheese and sugar until smooth.
Add eggs one at a time, then mix in sour cream, lime juice, zest, and vanilla.
Pour onto crust and bake 35–40 minutes, until set but slightly jiggly in the center.
Let cool completely, then chill at least 2 hours.
Step 3 – Prepare Lime Mousse
Sprinkle gelatin over water in a small bowl; let bloom 5 minutes.
Warm lime juice gently, then stir in gelatin until dissolved. Cool slightly.
Whip heavy cream and powdered sugar until soft peaks form.
Fold in lime zest and cooled gelatin-lime mixture until light and airy.
Step 4 – Assemble
Spread lime mousse evenly over chilled cheesecake layer.
Refrigerate at least 4 hours, or overnight, until set.
Step 5 – Serve
Garnish with whipped cream and lime slices/zest.
Slice with a hot knife for clean cuts.
Tips
For an even fresher taste, add a touch of mint to the mousse.
Make it tropical by swapping part of the lime juice with coconut milk.
Store chilled up to 4 days.
