Red Berry and Yogurt Clafoutis (Serves 6)
Ingredients:
300 to 400 g of red berries (strawberries, raspberries, blueberries, redcurrants, pitted cherries, fresh or frozen)
3 eggs
80 g of sugar
1 sachet of vanilla sugar (or 1 tsp vanilla extract)
100 g of flour
1 natural yogurt (125 g, ideally full-fat or Greek-style)
15 cl of milk
30 g of melted butter
1 pinch of salt
(Optional) Icing sugar for finishing
Preparation:
1. Preheat the oven
Preheat the oven to 180°C (fan-assisted).
2. Prepare the fruit
If using frozen berries, do not thaw them.
If using fresh fruit, wash, hull, and dry it gently.
3. Preparing the Mixture
In a bowl, whisk the eggs with the sugar and vanilla sugar.
Add the sifted flour and a pinch of salt.
Stir in the yogurt, milk, and then the melted butter.
Mix until you obtain a smooth, even batter.
4. Assembly
Butter a gratin or tart pan (22 to 24 cm).
Spread the berries in the bottom of the pan.
Gently pour the batter over the top.
5. Baking
Bake for 35 to 40 minutes, until the clafoutis is golden brown and set in the center.
Let cool to room temperature.
6. Serving
Sprinkle with icing sugar before serving.
Enjoy warm or cold, plain or with a spoonful of yogurt or cream.
Tips:
Add a few fresh mint leaves for a subtle flavor.
For an even more indulgent touch: stir a spoonful of almond flour into the mixture or replace some of the sugar with honey.
