ORANGE CHICKEN
✓ INGREDIENTS:
4 chicken thighs (skin-on or boneless, depending on your preference)
1 cup fresh orange juice
2 tablespoons soy sauce
2 tablespoons honey
2 cloves minced garlic
Salt and pepper to taste
Olive oil
Orange slices (optional, for garnish)
PREPARATION:
In a bowl, mix the orange juice, soy sauce, honey, garlic, salt, and pepper. Add the chicken thighs and let marinate for at least 1 hour (2 to 4 hours is better for more flavor!).
In a large skillet or pot, heat a little olive oil over medium-high heat.
Remove the thighs from the marinade (reserve the marinade) and sear them in the pan for about 4-5 minutes per side, until golden brown.
Reduce the heat slightly, add the reserved marinade, cover the pan, and cook over medium-low heat for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened slightly. You can uncover it for the last 5 minutes if you prefer a thicker sauce.
Pour the sauce over the thighs, garnish with orange slices if desired, and serve hot.
Serve with white rice, steamed potatoes, or a fresh salad.
