Mirror Coconut Raspberry Cheesecake
Ingredients:
*Crust
1/2 stick of melted butter (45 g)
22 crushed chocolate filled cookies
*Coconut Filling
1 1/2 packages of cream cheese at room temperature (190 g each)
1/2 can of condensed milk
1/2 can of half and half cream
3/4 cup of coconut cream
2 packets of gelatin (7 g each), hydrated in 1/2 cup of cold water and dissolved in a double boiler
*Raspberry Filling
2 1/2 packages of cream cheese at room temperature (190 g each)
1/2 can of condensed milk
1/2 can of half and half cream
1 packet of raspberry-flavored gelatin (35 g), dissolved in 1 cup of hot water
*Mirror Topping
1 cup of water
1 can of condensed milk
2 bars of chopped white chocolate (150 g each)
2 packets of Gelatin (7 g each), hydrated in 1/2 cup of cold water and dissolved in a double boiler
1 cup of refined sugar
Red food coloring
Preparation:
1. For the crust, mix the butter with the chocolate cookies until a paste forms. Pour into a pastry ring lined with aluminum foil and cover the bottom with the cookie mixture.
2. For the coconut filling, cream the cheese; add the condensed milk, the next 2 ingredients, and, with the mixer on, gradually add the dissolved gelatin. Set aside.
For the raspberry filling, cream the cheese; add the condensed milk, the half and half cream, and, with the mixer on, gradually pour in the dissolved raspberry gelatin. Pour a little of the coconut filling over the crust, add a little of the raspberry filling, alternating each flavor until you finish the ingredients. Freeze for 4 hours.
3. For the mirror, place the water and the next 2 ingredients in a bowl; melt in the microwave for 3 minutes, or until the chocolate is melted. Pour in the previously dissolved gelatin and mix; finally, add the sugar and stir until fully combined. Divide the above mixture into 2 bowls and paint one red; let it cool slightly without letting it set. In a pitcher or large bowl, pour both colors, alternating a little of each, ensuring they do not mix. Unmold the frozen cheesecake, place it on a wire rack, and coat it with the above mixture.
