Melt-in-Your-Mout Garlic Parmesan Chicken Meatloaf 🧄🧀🍗

Ingredients

2 large eggs
1/2 cup milk
4 cloves garlic, minced
1 small onion, finely diced
1 tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
2 tbsp fresh parsley, chopped (for garnish)

Directions:
Preheat oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
Cook onion and garlic in olive oil until softened and fragrant. Let cool slightly.
Mix ground chicken, breadcrumbs, Parmesan, mozzarella, eggs, milk, Italian seasoning, salt, pepper, and the sautéed onion/garlic in a large bowl until well combined.
Shape mixture into a loaf and place in prepared pan.
Bake uncovered for 45–55 minutes, until cooked through (internal temp 165°F / 74°C).
Rest for 5–10 minutes before slicing. Garnish with parsley and extra Parmesan if desired.
Serve with mashed potatoes, roasted veggies, or pasta for a hearty meal!
