Macaroni Pasta Salad with Tuna and Corn
Ingredients (Serves 4):
250g macaroni pasta
1 can of tuna in brine (approximately 150g drained)
1 small can of corn (140g drained)
1 red onion or spring onion (optional, for extra crunch)
1 diced red or green bell pepper (optional)
150g mayonnaise (or half mayo, half plain yogurt for a lighter version)
1 tbsp lemon juice
Salt and pepper to taste
Chopped parsley or chives (for freshness)
Preparation:
Cook the pasta
Cook the macaroni in boiling salted water according to the package instructions. Drain and let cool.
Prepare the filling
Drain the tuna and corn. Slice the onion and finely dice the bell pepper if using.
Mix
In a large bowl, combine the cooled pasta with the flaked tuna, corn, onion, and bell pepper.
Season
Add the mayonnaise, lemon juice, salt, and pepper. Toss well to coat.
Rest
Cover and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
Serve
Sprinkle with fresh parsley or chives before serving.
