KFC’S SECRET CHICKEN RECIPE

For the dressing
15 chicken thigh pieces
2 cups milk
1 tablespoon salt
2 cups common wheat flour
1/2 cup yellow cornmeal
1 tablespoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 tablespoon garlic powder
1 teaspoon ground dried oregano
1/2 teaspoon dried thyme
1 tablespoon mustard powder
For frying:
Sufficient vegetable oil (ideally canola or sunflower)

Step-by-step preparation:

1. Marinate the chicken
Place the chicken pieces in the milk with the salt, then cover and let sit for at least 4 hours or overnight in the refrigerator. This makes it more tender and juicy.
2. Prepare the dressing
In a large bowl, mix the wheat flour, cornmeal, and all the spices. This is the key to the KFC-style flavor. You can keep some to flip twice for extra crunch.
3. Toss
Remove the chicken from the marinade (without drying it), and toss it directly into the dried mixture, pressing well to adhere.
(Optional: Dip it back into the milk and dip it again for extra crunch.)
4. Deep-fry
Heat the oil to 170-180°C. Fry the chicken for 12 to 15 minutes, or until golden brown and cooked through. Drain on a wire rack or paper towel.
Let cool and enjoy.
