Egg Salad Toast Sandwich
Ingredients:
4 eggs
2 tablespoons mayonnaise
1 teaspoon mustard (Dijon or mild, according to your taste)
1 tablespoon chopped fresh chives or parsley
1 pinch paprika (optional)
Salt and pepper to taste
4 slices of sandwich, whole-wheat, or country-style bread
Butter or margarine for toasting the bread slices (optional)
A few green salad leaves (optional)
Preparation:
1. Cook the eggs:
Cook the eggs in boiling water for 10 minutes to hard-boil them.
Rinse them under cold water, peel them, and then roughly mash them in a bowl.
2. Prepare the egg salad:
Add the mayonnaise, mustard, chopped herbs, a pinch of paprika, salt, and pepper.
Mix well until the texture is creamy but still a little lumpy.
3. Toast the bread:
Toast the bread slices in a toaster or a lightly buttered pan until golden brown and crispy.
4. Assemble the sandwich:
Spread the egg salad generously on a slice of toast.
Add a few green salad leaves if desired.
Close with a second slice of toast.
Tip:
For extra crunch, add a few thinly sliced radish or cucumber slices. For a more indulgent version, you can also top with grated cheese and lightly melt in the oven.
