Classic Tiramisu
Ingredients:
3 eggs (whites and yolks separated)
100g sugar
250g mascarpone
200g sponge fingers
300ml strong coffee (cooled)
2 tbsp Marsala or amaretto (optional)
Unsweetened cocoa powder, for dusting
Preparation:
Prepare the coffee, add the alcohol if desired, and let it cool.
In a bowl, whisk the egg yolks with the sugar until pale and fluffy.
Gently fold the mascarpone into the sweetened egg yolks until smooth.
In a separate bowl, whisk the egg whites until stiff and gently fold them into the mascarpone cream, lifting the mixture to avoid breaking the whites.
Quickly dip the biscuits in the coffee (a quick dip to prevent them from softening too much) and arrange them at the bottom of a dish.
Cover with a layer of cream. Repeat: a layer of dipped biscuits, then a layer of cream.
Smooth the top, cover with plastic wrap, and refrigerate for at least 4 hours (better: overnight).
Just before serving, sprinkle generously with cocoa powder.
Tip:
For an elegant presentation, you can serve the tiramisu in individual glasses.
