Caramelized Apple Clafoutis
Ingredients:
For the caramelized apples:
3 apples (Golden Lady or Pink Lady), peeled and sliced
40g butter
40g sugar (brown or white)
1 pinch of cinnamon (optional)
For the clafoutis batter:
3 eggs
80g sugar
1 sachet of vanilla sugar or 1 teaspoon of vanilla extract
80g flour
250ml milk
100ml single cream
1 pinch of salt
Butter for the pan
Preparation:
1. Caramelize the apples:
In a skillet, melt the butter over medium heat.
Add the apples and sprinkle with sugar. Sauté for 8 to 10 minutes, until tender and lightly caramelized.
Add cinnamon if desired. Set aside.
2. Prepare the batter:
In a bowl, whisk the eggs with the sugar and vanilla sugar until pale.
Add the flour and a pinch of salt. Mix well.
Gradually pour in the milk and cream, whisking until you get a smooth batter, a little thinner than crepe batter.
3. Assemble the clafoutis:
Preheat the oven to 180°C (fan-assisted).
Generously butter a springform pan (or gratin dish).
Spread the caramelized apples over the bottom of the pan.
Pour the clafoutis batter over the top.
4. Bake:
Bake for 35 to 40 minutes, until the clafoutis is golden brown and firm to the touch.
Let cool before serving.
Tips & Serving:
Serve warm or cold, plain or with a scoop of vanilla ice cream or a dollop of crème fraîche.
For an even more indulgent taste, add a drizzle of caramel before serving.
