Blueberry Cheesecake Recipe

✅ Ingredients
For the Crust:
• 1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
• 1/4 cup granulated sugar
• 6 tbsp unsalted butter, melted
• (Optional) A pinch of salt
For the Cheesecake Filling:
• 24 oz (680g) cream cheese, softened (about 3 x 8oz packs)
• 1 cup granulated sugar
• 1 tsp vanilla extract
• 3 large eggs
• 2/3 cup sour cream
• 2/3 cup heavy cream
• 1 tbsp flour (optional, helps with texture)
For the Blueberry Topping:
• 2 cups fresh or frozen blueberries
• 1/2 cup sugar
• 1 tbsp lemon juice
• 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

1. Prepare the Crust:
• Preheat oven to 325°F (160°C).
• Mix graham cracker crumbs, sugar, and melted butter.
• Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
• Bake for 8–10 minutes, then let cool.
2. Make the Cheesecake Filling:
• Beat cream cheese until smooth (no lumps).
• Add sugar and vanilla, beat again.
• Add eggs one at a time, mixing just until incorporated.
• Stir in sour cream and heavy cream. (Don’t overmix.)
• Optional: Add 1 tbsp flour if you want a slightly firmer texture.
3. Bake the Cheesecake:
• Pour the filling over the crust.
• Place the pan in a larger roasting pan and pour hot water around it (water bath helps prevent cracking).
• Bake at 325°F (160°C) for 55–70 minutes, until the center is just slightly jiggly.
• Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
• Chill in fridge at least 4 hours or overnight.
4. Make the Blueberry Topping:
• In a saucepan, combine blueberries, sugar, and lemon juice.
• Cook over medium heat until berries release juice and it simmers.
• Add cornstarch slurry, stir until thickened.
• Let cool, then pour over chilled cheesecake.
5. Serve:
• Decorate with fresh blueberries if desired.
• Slice with a warm knife for clean cuts.

• Always use room temperature ingredients for a smooth filling.
• Avoid overmixing after adding the eggs — it can cause cracks.
• Don’t skip the chilling time — it makes the texture perfect.
