Ultraโ€‘moist banana cake studded with toasty walnuts and blanketed in a fluffy vanilla creamโ€‘cheese whip. Light, dreamy, and totally irresistible!

๐Ÿ“‹ย Ingredients
Banana Walnut Cake:
โ— 2 ripe bananas, mashed
โ— 1 ยฝ cups all-purpose flour
โ— 1 teaspoon baking powder
โ— ยฝ teaspoon baking soda
โ— ยผ teaspoon salt
โ— ยฝ cup unsalted butter, softened
โ— 1 cup granulated sugar
โ— 2 large eggs
โ— 1 teaspoon vanilla extract
โ— ยฝ cup buttermilk
โ— 1 cup chopped walnuts (toast if you like; reserve a little for topping)

Fluffy Vanilla Cream Layer:
โ— 1 cup heavy cream, cold
โ— 2 tablespoons powdered sugar
โ— 1 teaspoon vanilla extract
โ— ยฝ cup cream cheese, softened

(Optional garnish: extra chopped walnuts & a few banana slices, brushed with lemon to prevent browningโ€”only if handy.)

๐Ÿ“ย Instructions
1: Prep pans: Heat oven to 350ยฐF (175ยฐC). Grease and flour an 8โ€‘ or 9โ€‘inch round (or square) cake pan; line bottom with parchment if possible.
2: Dry mix: Whisk flour, baking powder, baking soda, and salt in a bowl; set aside.
3: Cream butter & sugar: In a large bowl beat softened butter + granulated sugar until light and fluffy (2โ€“3 min).
4: Add eggs & vanilla: Beat in eggs one at a time, scraping bowl; mix in vanilla.
5: Add bananas: Beat in mashed bananas until mostly smooth (a few small bits are fine).
6: Alternate dry & buttermilk: Add half dry mix, then all buttermilk, then remaining dry mix; mix just until combinedโ€”donโ€™t overmix.
7: Fold in walnuts: Gently fold in ยพ cup chopped walnuts (reserve rest for topping).
8: Bake: Spread batter in pan; bake 28โ€“35 min until a toothpick comes out clean and top springs back lightly. Cool in pan 10 min, then turn out to a rack and cool completely.
9: Make cream layer: Beat cream cheese until smooth. Add powdered sugar + vanilla; beat creamy. In a separate bowl whip cold heavy cream to softโ€‘medium peaks; fold whipped cream into cream cheese mixture until fluffy.
10: Frost: Spread the fluffy vanilla cream over cooled cake. Sprinkle reserved walnuts over top (add banana slices if using).
11: Chill & serve: Chill 20โ€“30 min to set the cream, slice, and enjoy that heavenly banana cloud!
